Nutritional values of carrot
Carrots are highly rich in provitamin A, which makes it a
good dietary medicine. They are also good sources of B group vitamins, as well
as vitamin C and E. all minerals and trace elements are present, including
iron. Three substances stand out in the composition of carrots;

CAROTENOIDS- very essential for the proper
functioning of the retina, particularly for night vision or in low light
situations. They also help to maintain the skin and mucosa in good condition.

VEGETABLE FIBRE- carrots contain about 3% of
vegetable fibres, most of which is in form of pectin. This helps to regulate
the movement of the stool and smoothens the intestinal mucosa. It also reduces
the abduction of fats (very useful in a person trying to reduce fat content in
the body).

ESSENTIAL OIL- this is active against intestinal
parasites.
